Every course is built around its sauce.

Emulsions, jus, foams and condiments each have a job on the plate. One brings depth, another acidity, sweetness or brightness, and together they hold the dish together. Sometimes the sauce is the picture itself.

The technique is classical French. The influences are South American and Asian.
